Our granddaughter, ten year old Riley Marie, is now spending her days with us while her parents are toiling away the work day. She is becoming quite the cook and this morning, insisted on making omelets for all of us. I requested that she make Grits as well because nothing goes better with an omelet than grits.
In a stroke of genius, Riley Marie, smothered this giant omelet with the grits, creating a new taste sensation. I’m not kidding. It was really good this way with the airy texture of the grits commingling with the hint of bacon, onions and tomatoes in the hand beaten eggs. Naturally, since Riley Marie made it, I had to eat it all, stuffing myself until my eyeballs were bulging.
